Every good cook knows that the right cut of meat is essential for the preparation of a dish. To carve meat, you need two tools whose quality really matters. A sharp knife or cleaver and a good quality wooden carving log.

Beech log for carving is a safe bet
Wooden logs for meat are made of different types of wood, we used beech wood for its great properties in the production of the G21 butchering log.

Unlike oak wood, beech wood does not have a bitterness in it that can be transferred to food, nor does it stain and discolour as easily as, for example, ash or lime wood. Beech logs are neutral in flavour, hard and durable as well as properly dense.

if you care about wooden logs for meat
To make your log cutter last as long as possible, don't wash it in the dishwasher or clean it with detergents. With proper care, you'll keep your meat slicing chisel in perfect condition without the use of chemicals. Just rinse it after each use and let it dry, you can also clean the cutting board with lemon juice or vinegar. It is a good idea to oil the wooden log from time to time with vegetable or mineral oil to prevent the wood from drying out.

TIP: You can soak the wooden chisel before slicing/chopping the bloody meat. The blood and juices from the meat will not so easily seep into the wood.
