Preparation before plucking

Poultry must be properly cooked before plucking, see indicative table below. Do not exceed the temperature and immersion time of the poultry. Longer immersion times may cause some parts of the meat and skin to cook and this may cause a problem when plucking. The times listed are approximate and we deliver during the steaming of the poultry to manually check the possibility of easy plucking of the feathers.
